What's the difference between a warmer and a rethermalizer?

Q: On your website you have warmers and rethermalizers. What's the difference?

A: That's a question we hear a lot. Basically a warmer keeps your hot food hot and a rethermalizer can heat up cold prepared food so that you can serve it hot. The folks at Vollrath, who manufacture both rethermalizers and food warmers, have made these nice info-graphics to explain the difference.

A third category would be a cooker. A cooker is a similar unit that gets hot enough to actually cook food. A cooker should be hot enough to saute onions or boil water. Although this is a job that might be done a lot better with pots and pans on top of range or stove.
